Class 102 Bara Brith recipe

8oz/225gm self-raising flour6oz/170gm Demerara sugar
6 Fl oz/ 170ml milk8oz/225gm Sultanas
1 large eggA pinch of salt
½ Teaspoon of gravy browning (optional) 
  1.  Preheat the oven to 180˚C/350°F/gas mark 4.
  2.  Grease a 2lb loaf tin
  3.  Put sifted flour, salt, sugar and Sultanas in a bowl (make sure that the sultanas are separated and coated with the flour mixture)
  4.  Beat egg and add to the dry mixture with the milk
  5. Mix well and add the gravy browning if required. The mixture should be quite runny and add enough gravy browning to make the mixture a caramel colour
  6. Turn into the loaf tin  and spread evenly
  7. Bake on the middle shelf of the oven for approximately one hour. Test with a skewer – it should come out clean
  8. Leave to cool in the tin for 10 – 15 minutes then turn out onto a wire rack
